Mexican Rice

Brown rice or Dirty rice 
Boneless Chicken
Chicken Broth (two cups of broth for each cup of rice)
Canned black beans (drained + rinsed)
Frozen corn
Fresh Salsa or Pace Picante
Fresh Pico de Gallo (recipe follows)
Sour Cream
Shredded Cheese

Cook the rice by following the instructions on the box. Use Chicken broth instead of water.  

Cut the Chicken breast into very small cubes and cook the boneless chicken with salt and pepper and dry up all the water. Mix with the rice. 

Pico de Gallo:

Mix diced onions, diced tomatoes and cilantro together with salt and pepper and chopped Jalapeños. Set aside.

To Serve,

Place the cooked rice on a bed of shredded lettuce. Put the black bean, then corn, then salsa, then Pico de Gallo, sour cream and finally guacamole and shredded cheese on individual serving plates.
