Brownie Pillow Cookies

Originally inspired by Bakerella, I decided to give it a shot with my personal (and easier) version and the results was a delicious cookie with the oh soo good brownie in between..Yumm..if you are a cookie and a brownie lover .. this is custom designed just for you!! Just watch out for your waistline and put your jogging shoes on.. These are Huge Cookies. Yes, I said one huge Cookie .... So just eat one.. or maybe another half..umm.. two..that's it!!!

So here it is.. Again.. at your own risk....

1 box of Fudge Brownie Mix
1 pk of Refrigerated Cookie Dough
Baking Tray

Make the brownie according to the instructions on the box or you can make your own homemade version. I mixed in walnuts before baking.

Keep the dough chilled until ready to use.

 Once the brownie is cooled down, cut it into small 1/2 inch pieces. If you are not in a hurry (unlike me) I would say to chop the brownie into bits or slice them finely.. UPDATE: I would highly advise chopping up the brownie and place it in a thinner layer, the result is much better and more presentable.

Now divide the dough into nine equal parts or 1/4 cup dough per cookie.

On an ungreased tray, flatten the cookie dough ball by patting it until it form a little disc shape. Now put the brownie chunk in the middle. Now cover it by rolling up the side and bring it on top. Using your palms and your fingers, smooth it out into a ball again. Place them atleast 4 inches apart as these are going to be huge.. 9 to a tray

Bake at 350 for 15-20 minutes until a lovely golden color. I let mines bake for 18 minutes. Follow the instuction on the cookie dough packaging for guidance.

Yumm... Let them sit on the baking tray for a little bit. Then transfer onto a cooling rack.

You see the brownie peeking from the middle?? I can almost taste it..
