Calzone

Dough:
3 cups flour
1 tbsp sugar
1 tsp salt
1 pack yeast
3 tbsp Oil
1/4 cups Warm water
1/4 cup milk

Filling suggestions:
You can pretty much use any leftover meat or go vegetarian.. Entirely upto what you have on hand.
Ready to use Pizza sauce or make your own
Meat (I used ground beef)
Olives
Mushrooms
JalapeƱos
Diced Onions
Diced Tomatoes
Diced Bell pepper
Mozzarella Cheese or any cheese on hand

In a bowl, measure the flour. Make a little well and add the milk and water.


 Knead into a soft dough.

Once it all gets together, pour a little bit of oil and knead again to make it smooth.

 Make it in form of a ball.

Cover and leave it to rise in a warm place. Now, go do your four loads of laundry! (note to self).

Let it rise for a couple of hours and divide it into two portions (for two foot long Calzones). You can make smaller ones too.
On a greased cookie sheet, flatten the part you are working with in a form of a larger rectangular with the palm of your hands.


Now on the middle, pour the pizza sauce and spread evenly as pictured.

 

Add all your toppings.

Top with lots of cheese. Yes, lots!

Using a plastic knife, cut strips about a quarter inch wide on both sides. Do one side, turn the baking tray around and do the other side.


Now is the time to wrap it up. Alternating the sides, wrap it in a criss cross pattern and continue until the very end.




Keep going..


All done. Cover and let it rise again for another half an hour or so if time permits.  

Here is the second one.. gets better with practice I suppose.. Spray with butter on top. For added interest, I sprinkled this one with garlic powder. Again, the possibilities are endless. I guess that's why I did not name it the Authentic Italian Calzone :)

Now bake at 375 in a pre-heated oven for about 25 minutes or until crusty and lightly brown.

And in case you want to see what it looks like inside..

I sliced them into two inches wide and served with the left over pizza sauce for the little kids.

And for the big kids....
