Chocolate Sheet Cake

When I saw this recipe at PW's cooking blog, I just couldn't resist. It is dangerously delicious. Also a word of caution, it is a pretty big cake, enough to feed an army...so please have intentions to share with family and friends otherwise there is a a risk that you will move up a size :D Enjoy!

Cake:
2 cups Flour
2 cups Sugar
1/4 tsp Salt
4 heaped tbsp Cocoa powder
2 sticks butter
1 cup boiling water
1/2 cup buttermilk ( or substitute 1/2 tbsp white vinegar and enough milk to top off 1/2 cup)
2 eggs, beaten
1 tsp baking soda
1 tsp Vanilla

Frosting/ Ganache:
1 and 3/4 sticks butter
1/2 cups chopped pecans
4 heaped tbsp cocoa powder
1/2 cup milk
1 tsp Vanilla
3 cups Powdered sugar



In a bowl, mix the flour, sugar and salt.

Prepare buttermilk by adding vinegar to milk. ( I didn't have buttermilk on hand)

Measure 4 tbsp cocoa powder.

Crack two eggs in a bowl and beat them well.

Get the baking soda and Vanilla ready. Preheat the oven to 350.

Now melt the butter in a saucepan. Save the wrapper.
Add the cocoa powder and mix well.

Now add the boiling water. Allow the mixture to boil for 30 seconds or so. Turn off the heat.

Now add the flour/sugar mixture.

 And mix well.



In a measuring jug, add the buttermilk, vanilla and the eggs. 

Mix well into a smooth batter.
Now pour this into the chocolate mixture

Mix well.
Now grease a 11x15 Jelly-roll pan lightly with the butter wrapper which is about an inch deep.

Pour the chocolate batter into the pan.

And bake at 350 for 20 minutes.


Now for the frosting. While the cake is baking, chop the pecans finely.

Melt the butter in a saucepan.



Add the cocoa powder.

Stir well and turn off the heat.


Add the milk and Vanilla.


Mix well and add the powdered sugar.

Mix well.

Pull the cake out of the oven.

Finish the frosting with adding the pecans.


Pour the frosting on top of the warm/hot cake.

It should spread on its own over the cake. If it needs help, use the spatula. Cover the cake completely.
No, you dont need to wait for it to cool down. You can start right off.
