Chicken Pinch Pies

Filling:
1 cup chicken minced
1 cup grated cheese
1 cup firm mashed potato
1 tablespoon freshly chopped cilantro
1 tablespoon crushed garlic
1 teaspoon pounded green chilies
1 teaspoon salt
1 teaspoon fine black pepper

Dough:
2 cups All purpose flour 
 ½ teaspoon salt
1 ½ teaspoon baking powder
125 g butter, grated
Iced water

Beaten Egg




1.       Combine all the ingredients for the filling together in a dish.



1.       Form into small balls with oiled hands and place onto a greased tray. Freeze for 10 minutes or until firm.


2.       Rub the butter into the dry ingredients to resemble crumbs. Add just enough iced water to form a soft but manageable dough.

3.       Roll the dough out thinly on a floured surface and cut into 7 cm rounds. Place the rounds on to a plastic covered tray and freeze for 10 minutes or until firm enough to handle.



4.       Place a small mince ball in the center of each round disc and pinch the dough  on the four sides or all around the all, allowing only the top to be visible. [ Suitable to freeze at this point]



    




5.       Dip in beaten egg and drop the pies top sides facing downwards in hot oil. Deep fry until golden brown.


       Drain in absorbent paper and serve. [ Makes about 5 dozen]

Chicken Karhai Qeema


Qeema/Ground Chicken 2 lbs
Adrak Lasan (Ginger Garlic) paste 2 tbsp
Diced onions 1/4 cup
Whole red chillies 4-5
A few of each: Whole black pepper, Cloves, Cinnamon stick
Oil 2 tbsp
Salt 1/2 tsp*
Haldi (Turmeric) 1/2 tsp*
Zeera (Cumin) powder 1 tsp*
Chat Masala 3/4 tsp*
Red Chilli powder 1/2 tsp*
Paprika 1/2 tsp*
Curry powder 1/2 tsp*
1/4 bunch Cilantro (save some for garnishing)
1/2 cup diced tomatoes
1/4 cup fried onions
A few drops of lemon


Heat oil in a skillet. Add the chopped onions and the whole red peppers, black pepper, cinnamon stick and cloves.
Stir fry for a minute or two and add the ginger and garlic paste.
Now add the Ground Chicken..
Add all the spices with the *
Now add the tomatoes, fried onions and cilantro.


Add lemon all the way towards the end and cover and cook until oil shows on top.Garnish with leftover Cilantro. Serve with your choice of bread.




Hekta Heeng

One bunch on Hekta Heeng
1/2 cup Chopped onions
1/2 cup diced tomatoes
1 tbsp Oil
Salt
1/2 tsp Red chilli powder
1/4 tsp Turmeric powder (Haldi)
1 tsp Roasted Cumin powder (Zeera)

Cut the Heeng into finger sizes. Wash well and set aside. In oil, saute the chopped onions and cook until translucent. Now add the tomatoes and all the spices. Cook for a minute or two and add the Heeng. Add half a cup of water and cook covered for roughly half an hour until the heeng is tender. Serve with Karee Khitchri.

*Neiman Marcus* Cookies

2 cups butter 
4 cups flour 
2 tsp baking soda 
2 cups sugar 
5 cups blended oatmeal (measure, then blend in blender) 
24 oz chocolate chips
2 cups brown sugar
1 tsp salt 
1- 8 0z Hershey Bar (grated) 
4 eggs 
2 tsp baking powder
2 tsp vanilla 
3 cups chopped nuts


Pre-measure the flour,salt, baking powder and baking soda and set aside.

Pre-measure the oatmeal, blend and set aside.






Pre-measure the chocolate and nuts and set aside.



 Cream butter and both sugars



















Add eggs, vanilla


 Mix together w/ flour, oatmeal, salt, baking powder and soda. 




















 Add chocolate chips, Hershey bar and nuts. 

























Roll into balls and place 2 inches apart on a cookie sheet. 


Bake for 10 minutes on 375. 



















Gitz Jalebi / Gulab Jamun

Just followed Directions on the box. Tip: Make the syrup thick otherwise they will become soggy.






Gulab Jamun:

Threw the box away so don;t have a picture of the box :(
Again followed the directions on the box and used milk instead of water.
The syrup, I let that be on slowest flame while transferring the Gulab Jamuns from the fryer.








Chicken Cheese Pie

1/ chicken breast boneless small cubes
1tsp each ginger and garlic paste
1/2 tsp black pepper
1/2tsp white pepper
salt to taste
2 cups heavy whipping cream 
2  large eggs
2 tbsp cornstarch
3/4 cup shredded cheese
1/2 tsp green chili paste
1/4 cup Cilantro or Green onions finely chopped


Marinate chicken with salt, peppers, ginger and garlic paste.

Beat the whipping cream until thick and it forms peaks.

Add eggs and cheese.

Add the chicken.
Add spring onions or cilantro.

Grease a baking dish and pour it into  it.



I don't have the picture of the baked pie :~  but inshaAllah when I make next time.. I will make it a point to get a picture..
