This pudding is a variation to the Caramel Pudding with dates added to it. Same procedure.
1 8oz pkg chopped dates
4 cups Whole Milk
10-12 tbsp sugar (depending on how sweet the dates are)
Vanilla Essence 1 tsp
Crack the eggs in a mixing bowl.
Here are the dates I used
and add the dates in the remaining 1 cup. Microwave for a minute or two until the dates gets tender and smushee (if that's a word)
Now add the remaining milk into the eggs and add the sugar.
For the sugar, I would advise using the dip-your-finger-and lick-to judge method to see if it is sweet enough. Always start with less.
Add the vanilla essence.
Using a hand blender, blend away until nice and even.
There you go...
Pour it in a a greased bundt pan or whatever your preference..
Put it in a water bath.
And bake at 350 for atleast 45 minutes until a knife comes out clean when inserted.
Invert it carefully over a dish after completely cooled down. Serve chilled.
